How to pronounce “tonkotsu” in English

So if you go to a tonkotsu ramen place, that's dashi.

So I purposefully made a tonkotsu, tonkatsu in my cookbook, so that there's no confusion.

So you can have a miso shio dare tonkotsu.

And oftentimes, I am served tonkotsu, and the server will say, here's your tonkatsu.

And then they put the broth in, whether it's tonkotsu, or chicken bone, or a vegetable based, that kind of has no salt flavor.

And if you eat ramen, then you know that tonkotsu is kind of like the holy grail of ramen varieties, because it's stinky and fatty,

make this creamy, delicious, unctuous tonkotsu.

There's shio, which is the salt based ramen, shoyu, which is the soy sauce based ramen, tonkotsu, which is a pork bone based ramen,

I do a shio dare, and a shoyu dare on the bottom, and then I pour over my tonkotsu.
