Momofuku is this tiny little restaurant group that started in the East Village about seven years ago by Dave Chang, the chef/owner of the Momofuku restaurants.
Momofuku Milk Bar opened next about three years ago in November.
Momofuku and in knowing the food of Momofuku and the personalities of Momofuku .
The Momofuku 's are always good for that.
And Momofuku Ando, the man who invented instant noodles has like a super compelling story.
And then went to Momofuku , and when you're not cooking for people at Momofuku , he stayed in a room
There was Momofuku Noodle Bar, Momofuku Ssäm Bar, Momofuku Ko, which is like a tasting menu only restaurant.
I started working at Momofuku about six years ago.
It's in the Momofuku cookbook.
And it's that Momofuku means Lucky Peach in Japanese, but Dave is a Korean-American chef, but we use local ingredients, but we use French technique.

Dave's first cookbook, Momofuku , was published in 2009.

And that's sort of the beginning of the Momofuku culture and how we've started to run things.

Somebody's gonna move in and take over the space and run Momofuku out of--.
You're here for a reason and you have and you know Momofuku and you know Milk Bar at a level.
And that's the question that happens every time we open a new Momofuku , whether it's a savory restaurant or it's a Milk Bar.
If I worked at another three-star restaurant and I saw that Momofuku Ssam Bar got three stars, I would be upset.
After graduating near the top of his class, he cooked under David Chang at Momofuku Noodle Bar before two years in line at Michelin
The biggest restaurant I've worked for was I think, it was Momofuku , it was the noodle bar.

Michael: I think one question that probably everyone in this room has is, why is there not a Momofuku in LA yet?
And my first question is always like, "OK, who's ever been to Momofuku ?" Or, "Who owns the Momofuku cookbook?"
I'd bake one or two or three things and I'd end up just bringing them in the next day to work, to Dave, and two or three other people that worked at Momofuku at the time, and feeding
And eventually, I ended up putting desserts on the menus at the Momofuku Restaurants.
But it ended up being this bakery that, in my head, it makes sense to the way Momofuku and the Momofuku restaurants and the menus are in terms of food and flavors and curiosities.
Otherwise, it doesn't make it onto the menu because that takes extra time and it takes extra effort, but that's how you make a bakery like this and a restaurant group like Momofuku
And we'll do everything from like, "OK, we're recipe testing or we're menu developing for the next Momofuku Noodle Bar soft serve flavors.
