We're moving on. So what's a vinaigrette ? Vinaigrette 's a ratio. A lot of you do crazy math or accounting or coding.You want to attribute things to numbers.
That was pretty simple. Simple vinaigrette . And you can exchange with anything you like. If you just want to use pomegranate juice, if it's like winter season, you do the same thing.
But it's up to every individual to kinda play with it and have fun. I hear some of you, "I can't make that in the restaurant. Too many ingredients." Well, cherry pick. Make the vinaigrette . Make the sauce. Make the puree. This is a book, 'cause if I did a book where everything is simple everything's simple everyone would say "Well why is it so simple? At your restaurant you don’t cook like that." So it's kind of like a catch 22.

And then you just put your leftover wilted greens in with it, and you puree it, and that wilted lettuce will just wilt into oblivion. But that vinaigrette and the body from the lettuce and everything-- it's going to be such a beautiful part of a really silky, delicious cauliflower soup, and it will season it.
And as our program is-- I swear it's not overwhelming. To make the vinaigrette , it's kind of like a play on a Caesar salad, which is not vegan.
You know what I love about cooking, and this is why I'm not a great baker, because it doesn't have to be that exact all the time. So our vinaigrette is done.
But it's not a fancy apron. So the vinaigrette 's done. If you wanted to make extra vinaigrette , you can make a ton of it and store it in your fridge.

In cooking it's almost always a water-based liquid and a fat-based liquid. So like a traditional vinaigrette , which we'll make it a bit. A butter is an emulsion.

And we work really hard to make them new. But the lichen vinaigrette -- so lichen's a fungus that grows on trees.
They're so gorgeous. They're green, they're plump, they're curvy, their meaty, they're delicious, they're shiny, they're incredible. You make the vinaigrette with just a jar, you just shake it up.
You know what I love about cooking, and this is why I'm not a great baker, because it doesn't have to be that exact all the time. And in vinaigrettes it adds a great layer of flavor.
There's a menu, actually, for a bib lettuce salad. It has a really delicious shallot vinaigrette , and I serve it as part of a meal with mashed cauliflower that's sort of like mashed potatoes, but much lower in carbohydrates and stuff, which normally I wouldn't necessarily suggest.

So this is the first dish. This is a Dorada with vinaigrette and cucumber. It's wonderful. It was so high.
It's retainable things. It's how to poach an egg, which we're about to do. It's how to make a vinaigrette , which we're about to do. It's how to build a dinner effectively for like $8 for four people.

And she was putting it into a bowl that's got a sealable lid. And she was shaking then a vinaigrette off to the side and pouring a little bit of that and sealing it. And that was her lunch she was taking to school.

So we're motoring through that. We're going to make our vinaigrette in a second, and then we're going to jump back to cooking with fennel, because nobody knows what to do with fennel either. So I'll talk through fennel overall.
And then some vinegar is going in. So if you make a vinaigrette . What's a vinaigrette ? Vinaigrette is a ratio, it's 3:1.
So that could be a combination of citrus juices or any vinegars. And the balance is the most basic vinaigrette you'll ever make. As you add other things like the onions, you're not really changing that ratio, you're just adding more flavor components to it.
at 6 o'clock in the morning. And she was making a vinaigrette in a Mason jar. Because that's how we make them at home, is just put everything into a mason jar and shake it.
Go green. So that is pretty much done, the end result is looking like this. We just made a really simple vinaigrette in a matter of moments and it's really not that hard to do. Because it's got that roasted allium flavor, which is the onion, it's really got a ton of flavor to it, so it's pretty versatile.
And then just a little bit of lemon that we'll toss with this. We're going to spread the vinaigrette around on top of that and a little bit of the oil.
Because it's almost like a vinaigrette , if you will.
The most awesome thing about this vinaigrette is you don't need any equipment.
And so I call it my shaker vinaigrette .
So what we do normally, we just always add the olive oil slowly into the citrus. If you do a champagne vinaigrette , same thing, you take your oil, and you slowly add it into your vinegar. New bottle? Here it comes.
